SEASONAL INGREDIENTS

We carefully select seasonal fish from all over the globe. These
ingredients will appear on our menu during their peak,
seasonally.

RICE

We select one of the finest Japanese short grain rice
koshihikari for our sushi rice.

SOY SAUCE

We offer 3 type of soy sauce. The house made low sodium soy
sauce infuse with mushroom and kelp, nikiri soy sauce made
with 30% of aged soy sauce and infuse with kelp, sashimi soy
sauce 100% wheat free aged soy sauce

SUSHI SEASONING VINEGAR

Also, we use red vinegar (akazu) to season our sushi rice.
Use of this red vinegar makes the rice naturally sweet so we
can use less sugar. This special touch makes our sushi
extremely refreshing.
